Jolly Bollywood Holiday Curry

This month Sexie Veggies had the honor to participate in the Vegan Mystery Box Challenge along with several other fabulous vegan food bloggers. We were given 3 ingredients and one week to come up with a tasty recipe. This month's mystery ingredients were: Cranberries, Pistachios, and Coconut Milk. 

Since we just celebrated Thanksgiving, I had extra potatoes, carrots, and green beans chillin in my kitchen. Add cranberries, pistachios, and coconut milk and the Jolly Bollywood Holiday Curry was born! This is perfect to snuggle up with on a cold night for some Sexie holiday love.

Jolly Bollywood Holiday Curry    

*Makes 4 servings

1/2 onion, diced

1 large potato, peeled, cubed

1 large carrot, cubed

1 cup green beans, cut to 1" pieces

1 cup dried cranberries

1/2 cup roasted pistachios, coarsely chopped

1 can of coconut milk

1 cup water

2 tablespoons curry powder

1 tsp salt

olive oil

Heat a large pot on medium and lube up the bottom with olive oil. Add the onions and let them saute till they are translucent. Then add your potato, carrot, and green beans. Give all those Sexie Veggies about 5 minutes to get sweaty together. Then pour on the cranberries, pistachios,  coconut milk, water, curry powder, and salt. Stir the pot a bit, put a lid on it, and wait for things to simmer. Once they are bubbling lower the heat a little and allow the Sexie Veggies to steam in their curry sauna for 30 minutes. Then pour your Jolly Bollywood Holiday Curry over a bowl of cooked rice and share with someone who has been nice. Or perhaps a little naughty.
