Potata Hash

SEXIE VEGGIES POTATA HASH*Serves 4  (Follow along with this video: Breakfast Potata Hash)

4 "shaved" potatoes

1 medium onion diced

1 yellow bell pepper diced

1 orange bell pepper diced

1 cup of mushrooms

2 tomatoes diced

1 cup spinach "ribbons"

olive oil

salt and pepper

Instructions: Cover the bottom of the pan in olive oil and heat over medium heat. Squeeze the excess moisture out of the "shaved" potatoes. Add the potatoes and onion to the hot oil. Cook until the bottom is brown, then flip the hash over to brown the other side. Once the hash is brown, add the diced bell peppers and mushrooms. Toss the mixture in the pan and cook until the bell peppers and mushrooms are soft. Add the tomatoes and spinach "ribbons." Cook until the spinach has wilted. Add salt and pepper to taste and "let the morning mastication begin!"
